Healthy Recipe of the Week
Easy Chicken, Corn and Bean Enchiladas
Ingredients
1 Rotisserie Chicken, shredded ½ small onion, diced 1 cloves garlic, minced (optional) 1 Cup Corn I Cup Black Beans , drained and rinced 2 Cups Mexican Mix Cheese 2 Cups Fresh Salsa 1 8oz container Fat Free/Low Fat Sour Cream 1 8oz container Fat Free/Low Fat Cream Cheese ½ Teaspoon each salt and pepper ½ teaspoon Cumin 3 tbls fresh cilantro 6 - 8 Flour Tortillas
Directions
Heat oven to 350 degrees
In a medium bowl combine the shredded chicken, onion, garlic, corn, black beans, and 1 cup of Mexican cheese. In a second bowl combine the fresh salsa, sour cream, cream cheese, salt and pepper, cumin and the fresh cilantro. Transfer ½ of the cream mixture into the chicken and mix well. Take a large ,well greased, baking dish, (same width as the tortillas) and lay a small layer of cream mixture across the bottom. Fill the 8 tortillas with the chicken and cream mixture, rolling into a tube and laying them side by side in the dish.,. Top with the remaining cream sauce and top with remaining cheese. Cover with foil and bake for 35 minutes, remove foil and bake 5-7 minutes longer until the cheese has melted and is golden brown Serve with Mexican rice and black beans.
